With over 25 years of experience across luxury hotels, award-winning restaurants, breweries, and resorts throughout Australia, Asia, and the Middle East, Chef Gursu Mertel brings a wealth of knowledge, creativity, and leadership to every kitchen he leads.

Originally from Türkiye, his passion for food was shaped by family meals and traditional cooking from an early age. Throughout his career, he has developed a reputation for creating memorable dining experiences that balance classical techniques with modern innovation, always with a strong focus on quality ingredients and genuine hospitality.

A two-time 2 Chef Hat award recipient in Australia, Gursu is dedicated to mentoring teams, supporting local producers, and delivering food that tells a story while remaining approachable and memorable.
